Jellied Pork (Thit Dong) - 46th Place

Ranked 46th, thit dong is a northern Vietnamese delicacy known for its unique jelly-like texture. This dish is crafted by simmering pork, knuckles, skin, carrots, mushrooms, and spices until it solidifies into a gelatinous form. It is traditionally enjoyed during the Lunar New Year alongside pickled onions and rice, and it is a winter staple due to its preservation qualities.

The dish's rich, savory flavor is enhanced by shiitake and wood ear mushrooms, which add earthy notes to the final product. Thit dong is a popular choice during the colder months in northern Vietnam, reflecting its role in both festive and everyday dining.

Pork Rind Soup (Canh Bong) - 60th Place

Earning the 60th spot is canh bong, a clear, mildly sweet soup cherished in Hanoi and northern Vietnam. This dish features dried pork skin, which is first washed with ginger and vinegar, then sun-dried and toasted to achieve its distinctive texture. The broth is made from pork bones and is complemented by carrots, onions, shiitake mushrooms, wood ear mushrooms, and occasionally pork meatballs.

Canh bong is often associated with warmth and family gatherings, making it a popular choice during festivals and family reunions.

Topping the TasteAtlas list is Japan's ramen noodle soup, followed by Turkey’s Kuzu şiş and Thailand’s tom yum soup. The inclusion of Vietnamese dishes in this prestigious ranking highlights the global recognition of Vietnam’s rich culinary heritage.
