Bun Cha Chan, a modest 20-square-meter eatery in Hanoi, has gained international recognition after being awarded a prestigious Michelin Bib Gourmand. Known for its expertly grilled pork with noodle soup, the eatery at 114 Mai Hac De Street in Hai Ba Trung District is one of five new Vietnamese establishments added to the Bib Gourmand list on June 20, 2024, celebrated for offering high-quality food at affordable prices.

Operating for 12 years, Bun Cha Chan has long been a favorite among locals, but its inclusion in the Michelin Guide has brought it newfound fame. The restaurant’s signature dish, bun cha, is renowned for its tender pork patties, which are grilled right at the entrance over a charcoal fire. Patrons can watch as the pork, made from a blend of lean and fatty shoulder meat, is transformed into golden, savory patties.

Unlike many other bun cha spots in Hanoi, Bun Cha Chan serves the grilled pork, noodles, mustard greens, and scallions together in one bowl, all drenched in a broth simmered for 10 hours using pork bones. The result is a perfectly balanced sweetness in the broth that enhances the natural flavor of the pork without overpowering the dish. Customers can choose from three pork varieties—sliced, minced, or wrapped in betel leaves—each offering a different texture and taste.

The simplicity of the ingredients, combined with the meticulous preparation of the broth the night before, ensures that every bowl delivers consistent quality. The broth remains clear, flavorful, and sweet from the bones, making each spoonful a comforting experience.


Bun Cha Chan also offers side dishes like spring rolls for just VND10,000 (40 U.S. cents) each, and the traditional version of bun cha with a separate bowl of dipping sauce for those who prefer a classic take.
